Boneless chocolate chip cookies are classic chocolate chip cookies but without the chocolate chips. These are just the yummy dough you would use for the best chocolate chip cookie recipe, only chocolate-free! I love these because they are reminiscent of chew chocolate chip cookies we grew up with, except there is no melty chocolate, which means there is less mess for my toddler, Charlotte.

Why You’ll Love This Recipe

  • Chewy with Crisp Edges: These cookies nail that perfect cookie texture—soft centers with just the right amount of crisp edges.
  • Brown Butter Brilliance: The browned butter gives these cookies an irresistible nutty, caramel-like flavor that elevates them beyond any classic chocolate chip cookie recipe.
  • No Chocolate Needed: Even fans of chocolate will love the way the buttery cookie flavor shines on its own—great for those who like to mix things up!

Ingredients

Ingredients for boneless chocolate chip cookies.

  • All-Purpose Flour: Use a measuring cup to spoon and level the flour for accuracy. A good idea is to choose high-quality purpose flour for consistent results.
  • Light Brown Sugar: This adds a soft center and hints of caramel. Opt for fresh, moist brown sugar to avoid dry cookies.
  • Granulated Sugar (White Sugar): White sugar helps give the cookies a bit of crispiness around the edges for that classic cookie texture.
  • Unsalted Butter: Browned to golden perfection over medium heat. Always start with butter at room temperature for even melting.
  • Large Egg + Egg Yolks: The extra egg yolk creates a chewier texture while adding richness. For best results, ensure they’re at room temperature.
  • Baking Soda: Gives the cookies a light lift, creating those perfectly domed tops of the cookies.
  • Kosher Salt: A pinch of kosher salt balances the sweetness perfectly! Avoid table salt for better flavor, as table salt has much more sodium.
  • Pure Vanilla Extract: Use the good stuff—pure vanilla extract makes all the difference in the flavor profile. I also love a vanilla bean paste!
  • Flaky Sea Salt (Optional): Sprinkling sea salt on the tops of the cookies is a pro move for balance and is something I do with all of my cookies and brownies!

Ingredient Substitutions

  • Replace brown butter with coconut oil for a lighter, tropical twist—just be sure to measure carefully to maintain the right cookie texture.
  • Swap light brown sugar with dark brown sugar for an even deeper molasses flavor and chewier cookies.

Ingredient Additions

  • Chopped toasted pecans or walnuts: Add a nutty crunch to complement the brown butter flavor.
  • White chocolate chips: For a sweet, creamy surprise in every bite.

Expert Tips and Notes

  • Chill the Dough: Letting the cookie dough rest in the fridge allows the flour mixture to hydrate and the flavors to meld, leading to the perfect cookies.
  • Use a Cookie Scoop: Using a cookie or ice cream scoop ensures even dough balls, so every cookie bakes evenly with a chewy texture.  This way cookies bake evenly!
  • Watch the Oven Temperature: Preheat your oven to exactly 350°F—using a thermometer is a good idea for best results.
  • Tap the Baking Sheet Mid-Bake: This helps flatten the tops of the cookies slightly and creates a great cookie texture.
  • Cool on a Wire Rack: Transferring the cookies from the sheet pan to a wire rack prevents over-baking on the bottoms.

  • Drizzled with Honey or Caramel: A drizzle of honey or caramel over the tops of the cookies adds a little extra sweetness.
  • Paired with Coffee or Tea: These buttery cookies are perfect alongside a warm cup of your favorite brew.

Storage Instructions

  • Room Temperature: Store these delicious cookies in an airtight container for up to 5 days to maintain their soft center and crisp edges.

Simply DELISH! I do like chocolate, but chocolate chip cookie base is such a star on its own and I’ve been a huge fan of chip-less chocolate chip cookies with salt for a while. But this recipe with the browned butter… OMG!!! It just takes it to the next level! Your house will smell SO GOOD before you even start baking! I’ve recommended this specific recipe to a few friends already and we’re all just obsessed! Make it, you will not regret it!!
