Equipment

  • Wooden spoon or rubber spatula
  • 9x13-inch pan
  • Parchment paper or nonstick cooking spray

Ingredients
  

  • 3/4 cup (1.5sticks) unsalted butter
  • 1/4 teaspoon kosher salt
  • 10 cups (470g)mini marshmallows
  • 1 teaspoon vanilla extract
  • 6 cups (180g) Rice Krispies cereal
  • Flaky sea salt optional, for topping

Instructions
 

  • Melt the butter in a large pot over medium heat, stirring frequently until it turns golden and smells nutty.
  • Reduce the heat to low and stir in the marshmallows and kosher salt until the mixture is smooth and gooey. Remove from the heat and stir in the vanilla extract.
  • Gently fold in the Rice Krispies cereal until it’s evenly coated with the marshmallow mixture.
  • Transfer the mixture to a prepared pan lined with parchment paper or coated with nonstick cooking spray. Lightly press it into an even layer using a rubber spatula or butter wrappers.
  • Sprinkle the top with flaky sea salt, if desired. Let the treats cool completely at room temperature before slicing and serving.

Notes

Use Medium-Low Heat: Keep the heat on medium-low while browning the butter to avoid burning it. Watch for a nutty aroma and golden brown milk solids.
Don’t Overpack the Mixture: When pressing the rice krispie mixture into the pan, use a light touch to keep the treats airy and soft.
Butter Wrappers as Tools: Use the butter wrappers to press down the mixture without sticking to your hands or utensils.
Parchment-Lined Pan: Line the bottom of the pan with parchment paper for easy removal and cleaner edges when slicing.
Extra Marshmallows at the End: Folding in extra mini marshmallows after mixing the cereal ensures gooey marshmallow pockets throughout. Is there such thing as too many marshmallows?
